So named because this is how I made it tonight. I served it with Winter Ratatouille (With Option to Make Into a Great Appetizer!). Ingredients:
2 tablespoons olive oil |
1 small onion, minced |
1 cinnamon stick |
1 cup raisins |
1 tablespoon ras el hanout spice mix |
1 teaspoon salt |
1 teaspoon pepper |
2 (15 ounce) cans chickpeas, drained & rinsed |
1 cup couscous |
1 cup boiling water |
Directions:
1. Heat olive oil. Add onion & cinnamon stick. Saute 5 minutes. 2. Add raisins, ras el hanout, salt & pepper, stir well. 3. Add chickpeas, stir to combine well. When thoroughly heated, add couscous & water. 4. Stir well, cover, turn off heat & let sit 5 minutes. Stir, serve & enjoy. |
