This is from Disney's Polynesian Resort. I buy the bread a day before I make this, as day old bread seems to work better for me. I also do not have them cut it, I cut it myself. I also garnish it with a few slices of banana before I sprinkle it with the sugar and cinnamon. Ingredients:
4 slices sourdough bread cut 1 inch thick |
2 banana |
1/3 cup sugar |
1 tsp cinnamon |
1 egg |
1/4 cup milk |
1/2 tsp vanilla extract |
oil for frying |
whipped butter if desired |
maple syrup if desired |
powdered sugar if desired |
Directions:
1. Depending on the size of the bread slices, cut a 1 inch pocket in one side of the bread slice. 2. Cut banana in half crosswise, then split each piece lengthwise. 3. Remove peel and stuff 2 pieces in each pocket, again depending on size. Set aside. 4. Mix sugar and cinnamon. Set aside. 5. Mix egg, milk and vanilla until well blended. 6. Heat about 4 inches of oil in a pan to 350 F. 7. Dip stuffed bread into egg mixture, allowing it to soak in for a few minutes. 8. Fry in hot oil until lightly brown, turning to brown both sides. 9. Drain on paper towels on cake rack. 10. Sprinkle with cinnamon-sugar and serve at once. 11. Top as desired. |
