TOMATOES WITH MARINATED MOZZARELLA AND GARLIC SALSA This recipe came from an estate sale. I obtained it when I purchased the family collection from the Pinion Estate in Mesquite, Texas in 1994. Ingredients:
2 vine ripe tomatoes |
6 ounces fresh mozzarella |
1 cup roasted peeled green chili |
1 tablespoons extra virgin olive oil |
1 teaspoon roasted chopped garlic clove |
1 tablespoon fresh basil |
vinaigrette |
1 cup extra virgin olive oil |
1/3 cup balsamic vinegar |
1 teaspoon dijon mustard |
1 teaspoon chopped garlic |
1 teaspoon salt |
1 teaspoon freshly ground black pepper |
Directions:
1. Combine ingredients for vinaigrette. 2. Slice fresh mozzarella and marinate in vinaigrette for 1 hour. 3. Chop chilies and add extra virgin olive oil, roasted garlic and basil. 4. Slice tomatoes into rounds and on 4 plates alternate tomato slices and mozzarella slices. 5. Place some marinated chilies in center of each plate and drizzle balsamic vinaigrette over salad. |
