After I retired, I persuaded my wife to let me do most of the food preparation. This refreshing salad is simple to put together, but the results are fantastic.Wendell Obermeier, Charles City, Iowa Ingredients:
8 thick tomato slices |
1 teaspoon salt |
1/2 teaspoon pepper |
2 teaspoons sugar |
8 thin sweet onion slices |
1/2 cup vinegar |
8 green pepper rings |
chopped fresh parsley |
Directions:
1. Place tomato slices on paper towel to drain excess moisture; place on serving plate. Combine salt, pepper and sugar; lightly sprinkle half over tomatoes. Top each tomato with an onion slice. Sprinkle 1 tablespoon of vinegar over each onion. Sprinkle remaining salt mixture over onions. Cover and refrigerate at least 30 minutes before serving. Garnish with green pepper rings and parsley. Yield: 8 servings. |
