Another tried and true delight that came from an estate sale in Allen, Texas in 1993. Anything with tomatoes is a huge hit in my house so when tomatoes are plentiful and good in the heat of summer these are on the table often. Read more . Enjoy Ingredients:
2 large firm tomatoes |
2 small garlic cloves |
1 teaspoon fresh rosemary or basil chopped |
1/2 teaspoon salt |
1 teaspoon freshly ground black pepper |
olive oil |
Directions:
1. Slice tomatoes horizontally into 4 slices each 1/2 thick. 2. Peel and split garlic then mash slightly with side of a knife. 3. Rub garlic on cut surfaces of tomatoes. 4. Arrange tomatoes on broiler pan. 5. Sprinkle with herbs, salt and pepper then drizzle lightly with oil. 6. Broil until surfaces are blistered then serve immediately. |
