Adults only! Adapted from Morey Amsterdam's Benny Cooker Crock Book. Although the title comes from a joke from Amsterdam's night club act, the recipes are all genuine. Cooking time is standing time.
Ingredients:
1/3 cup extra virgin olive oil
1 teaspoon salt
2 tablespoons bourbon
1 tablespoon fresh basil, chopped
1 tablespoon fresh parsley, chopped
1 teaspoon grated lemon peel
6 large ripe tomatoes, peeled and thinly sliced
Directions:
1. Combine oil, salt, bourbon, basil, parsley and lemon peel, and mix well.
2. Arrange tomatoes on a platter and sprinkle dressing over them.
3. Let stand 15 minutes before serving.
