Zesty cheese filling adds a delicious compliment to the tang of the tomato,the breading when fried makes a great side veggie dish Ingredients:
1clove garlic,minced |
1/4 cup minced parsley |
1/8 tsp salt |
8oz pk cream cheese softened |
1 tsp fresh chopped basil or 1/2 tsp dried(optional) |
4 beefsteak tomatoes |
1/2 cup all purpose flour |
1 egg,beaten with 1 tblsp milk |
2/3 cup dry bread crumbs |
3 tbsp butter |
3 tbsp olive oil |
fresh basil or parsley,optional |
Directions:
1. Using a mixer beat together the garlic ,salt ,parsley and cream cheese;add basil,if desired.Cut tomatoes into 12 even slices, about 1/2 ins thick.Spread 6 slices with about 2 tblsp of cream cheese mixture;and top with remaining slices of tomato to make 6 sandwiches.Dip each in flour,then egg mixture and then bread crumbs.Fry on both sides over med heat in a mixture of butter and olive oil until brown. 2. Garnish with Fresh basil or parsley( optional) |
