Tomatoes And Mangos With Basil Vinaigrette |

when tomatoes are in season there is no better side dish. This dish always gets an amazing reaction. Ingredients:
basil vinaigrette |
1 french shallot |
1/4 cup sherry wine vinegar |
1 teaspoon dijon mustard |
salt and pepper to taste |
3/4 to 1 cup good olive oil |
handful of fresh basil |
2 ripe mangos |
2 ripe tomatoes (tr y for same size as mango) |
shredded basil leaves for garnish |
Directions:
1. combine shallot, vinegar, salt pepper and mustard in processor or blender. slowly add the olive oil with machine runnning. add basil leaves. reserve dressing. 2. peel and slice mangos into 6 slices each (3 from each side of pit) 3. slice tomatoes 4. top each mango slice with a tomatoe slice 5. overlap on a serving platter 6. drizzle with vinaigrette 7. garnish with shredded basil. |
