TOMATOES A LA PROVENCALE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Garza Estate in Royse City, Texas in 1994. Ingredients:
4 medium tomatoes |
3 garlic cloves |
1/2 cup minced parsley |
1/4 cup plain dry bread crumbs |
1 teaspoon salt |
1 teaspoon freshly ground black pepper |
Directions:
1. Cut tomatoes in half around the hemisphere. 2. Be careful to keep skin intact then scoop pulp out into a bowl. 3. Mince garlic then add it, parsley, salt, pepper and bread crumbs to the pulp. 4. Return mixture to hollowed out skins then arrange tomatoes in lightly oiled baking dish. 5. Place under preheated broiler for 10 minutes. |
