A garden soup with a good, mild flavor. Touches of green in the red soup add interest in texture and color. Excellent. Ingredients:
2 tbsp butter |
2 cups sliced onion |
4 cups chicken stock |
8 cups cubed zucchini |
5 large tomatoes, peeled, cut in chunks |
1 tbsp fresh parsley, chopped |
1/4 tsp oregano |
1/4 tsp basil |
1/4 tsp dry dill weed |
1/2 tsp celery flakes |
1 tsp granulated sugar |
1/2 tsp salt |
Directions:
1. Put butter and onion into large soup pot. Saute until soft and clear. 2. Add remaining ingredients. Bring to boil. Cover and simmer for 20 minutes. Check for seasoning. Makes about 10 cups. 3. Note: To peel tomatoes, immerse in boiling water for 1 minutes, then peel. |
