This is a wonderful summer soup. Add some rustic bread to this! Ingredients:
ripe peeled and diced tomato |
2 large avocados - peeled, pitted, and then sliced |
1/4 c fresh lemon juice |
1 qrt. tomato juice |
1 small onion, chopped |
1 green bell pepper |
1/4 cup chopped fresh chives |
cayenne pepper(or hot pepper sauce) to taste |
1 1/4 c plain nonfat yogurt |
add salt to taste |
Directions:
1. Place the tomato, the avocados, onion, green bell pepper, and the lemon juice into the medium sized bowl of the food processor. 2. Process the soup. 3. Pour in 1 c. tomato juice, and blend. 4. Add salt and pepper to taste. 5. Enjoy! |
