Tomato With Scrambled Egg |

Recipe of my mother when she had to prepare a dish hurriedly and I always loved it. Ingredients:
ripe tomatoes - 4 nos |
egg – 2 |
spring onion - 2 stalk |
fresh coriander leaves |
onion seed- 1/2 tsp |
oil – 1 tbsp |
salt to taste |
turmeric powder - a pinch |
green chili ( optional) |
Directions:
1. Wash and cut the tomatoes in to halves to take out the seeds and make small pieces. 2. Wash and cut the spring onions roughly. 3. Wash and chop the coriander leaves and keep aside. 4. Beat the eggs and keep aside. 5. Heat oil in pan 6. Temper with onion seeds 7. Add the tomatoes mix it and add the spring onions. 8. Chopped chili can added if you like it to be hot. 9. Add salt and turmeric powder according to taste cook for 3 mins 10. Add the beaten egg and stir thoroughly . cook for 2 mins. 11. Turn off the gas and garnish with fresh coriander leaves. 12. can be served with rice, indian flat bread or even with pasta! |
