Tomato, Wine and Feta Sauce |

This is a traditional Greek recipe for shrimp (garides me saltsa) but I use it on everything from chicken to fish and pasta (including ravioli). Ingredients:
4 tbs olive oil |
2 tbs butter |
1/2 cup onion, diced |
2 cloves garlic, minced |
28 oz diced tomatoes |
1/2 cup dry white wine |
1 tbs dry parsley (or 2 t fresh) |
1/2 tsp oregano |
1 tsp basil |
1/2 tsp salt |
3/4 cup reduced fat feta, crumbled |
1 fresh ground pepper |
Directions:
1. Heat oil and butter, add onion and garlic and saute until soft. 2. Add the tomatoes, wine and herbs and simmer until thick. 3. If you?re making the shrimp dish, add 2 pounds of shelled shrimp to the sauce before adding the feta cheese and cook 5-6 minutes only until pink and firm. 4. Add feta and heat through. 5. Serve over chicken, fish or pasta cooked while the sauce thickens. |
