An unlikely pairing of two summer favorites. It is amazing how well these go together. This recipe is in the July 2007 Southern Living magazine. I saw it and could not believe it. We tried it anyhow, it is fantastic. Read more . This is one of those few recipes I did not modify. Ingredients:
5 cups watermelon, cubed 3/4 inch pieces |
1 1/2 pounds ripe tomatoes, cubed 3/4 inch pieces |
3 teaspoons sugar |
1/2 teaspoon salt |
1 small red onion, quartered and sliced |
1/2 cup red wine vinegar |
1/4 cup olive oil |
cracked black pepper, to taste |
Directions:
1. Combine watermelon and tomatoes in a large bowl. Sprinkle with sugar and salt, tossing to coat. Set aside and let stand for 15 minutes. 2. Stir together with fruit, the onion, vinegar and oil. Cover and chill for 2 hours. 3. Serve chilled (over lettuce leaves if desired). |
