Invariably, everything I cook has alcohol as an ingredient. Why not? Ingredients:
1 tablespoon olive oil |
1 tablespoon butter |
2 medium onions, sliced |
2 small garlic cloves, smashed and peeled |
1 (32 ounce) container vegetable broth (4 cups) |
2 (28 ounce) cans italian plum tomatoes, drained |
1 (15 ounce) can tomato sauce |
1/4 cup vodka |
1 teaspoon salt |
1 teaspoon sugar |
2 cups half-and-half |
Directions:
1. In a skillet, saute onions and garlic in olive oil and butter over medium high heat for 1 minute In a slow cooker, add vegetable broth, tomatoes, tomato sauce, vodka, salt and sugar. Then add the sauteed onions and garlic. Cover and cook on high heat for 5 hours. 2. Puree the soup in batches, then stir in half-and-half. 3. Cover and cook for an addition 20 minute on low heat setting. |
