Great with fresh tomatoes from the garden on a hot summer day Ingredients:
2 tomatoes, chopped |
1/2 lb canned tuna, good quality, drained and separated into large flakes |
1/2 cup extra virgin olive oil |
1/4 cup red onion, minced |
2 teaspoons capers |
2 garlic cloves, minced |
salt, to taste |
white wine vinegar, to taste |
12 fresh basil leaves, torn into small pieces |
1 (5 ounce) bag mixed salad greens |
2 hard-boiled eggs, peeled and cut |
12 black olives, mediterranean style |
Directions:
1. In a bowl, combine all ingredients. 2. Toss and serve. |
