An all-purpose recipe that can be used for bruschetta, fresh bread, pizza, nachos, etc.
Ingredients:
3 tomatoes, finely chopped
1/2 yellow bell pepper, coarsely chopped
1/2 orange bell peppers or 1/2 green bell pepper, coarsely chopped
1 garlic clove, minced
4 green onions, chopped including tops
1/4 cup greek pitted black olives, chopped
salt and pepper
Directions:
1. Combine tomatoes, bell peppers, garlic, onions and tops, olives, salt and pepper in a bowl.
2. Sprinkle lightly with salt and heavily with pepper and mix well.
3. Use as a topping as desired.
