Entered for safe-keeping, from Weight Watchers Magazine, September-October 2008, only 1 thingie for 1/3 cup tomato tartar with 3 endive leaves. This is a light bite for snack or appetizer. Ingredients:
2 tomatoes, seeded and chopped |
6 brine-cured kalamata olives, pitted and chopped |
1 tablespoon red onion, minced |
1 tablespoon fresh basil, chopped |
1 tablespoon capers, drained |
1 tablespoon olive oil |
1 tablespoon lemon juice |
black pepper, to taste |
12 leaves endive |
Directions:
1. Combine all ingredients except endive leaves. 2. Spoon into endive leaves. |
