Tomato & Summer Squash Gratin

A healthy, low fat version of gratin, using tomatoes, squash, and zucchini. Perfect side dish for a summer dinner.
Ingredients:
2 medium zucchini, thinly sliced
2 medium tomatoes, thinly sliced
2 medium squash, thinly sliced
1/2 tbsp fresh rosemary
1/2 tbsp fresh thyme
1 tsp dried oregano
1/3 cup grated parmesan cheese
1/3 cup breadcrumbs
1/2 tbsp freshly ground black pepper
2 tbsp olive oil
Directions:
1. Preheat the oven to 375 degrees F.
2. Slice the tomatoes, squash, and zucchini into 1/4-inch thick round slices as uniformly as you can.
3. On a cookie sheet or ovenproof platter, place a layer of squash, non-overlapping, then a layer of tomatoes, then a layer of zucchini.
4. Mix all the dry ingredients and herbs together, then scatter them evenly over the top layer.
5. Drizzle with the olive oil on top and bake until golden and crusty, about 25-30 minutes.
