Tomato Stuffed Roasted Red Peppers

Ingredients:
4 red peppers, cut in half and seeded
4 plum tomatoes, chopped
1/2 cup green onion, chopped
2 garlic cloves, crushed
1/4 cup basil leaves, chopped
1/4 cup olive oil
2 tablespoons lemon juice or 2 tablespoons white balsamic vinegar
Directions:
1. Place halved peppers on baking sheet.
2. Mix together remaining ingredients.
3. Fill each pepper with tomato mixture, sprinkle with salt and pepper.
4. Bake at 425F for 20-25 mins or until peppers are cooked.
