Good as a dip with tortilla chips or to top some grilled chicken, or pork or fish. Loosely based on a local farmer's market's recipe. Ingredients:
1 large tomato, seeded and diced (or 2 smaller ones) |
1 jalapeno pepper, seeded and finely chopped |
1/2 cup scallion, chopped |
1 pint fresh strawberries, stems removed and diced |
1 teaspoon dried thyme leaves |
2 tablespoons fresh cilantro, chopped |
1 tablespoon cider vinegar |
2 teaspoons olive oil |
1/2 teaspoon coarse black pepper |
1/4 teaspoon salt |
Directions:
1. Place all ingredients in a large bowl and toss to mix well. 2. Cover and chill at least 2 hours before serving. |
