A Romanian Hungarian soup served with polenta and sour cream. You could make this with oil instead of bacon if you wish. Ingredients:
4 slices bacon, cut in small pieces |
1 onion, chopped |
2 red bell peppers, roasted first, chopped 1/2-inch pieces |
2 teaspoons salt |
2 garlic cloves, mashed |
6 tomatoes |
1 teaspoon paprika |
Directions:
1. Fry bacon; add onion; cook until translucent. 2. Add bell pepper. 3. Sprinkle with salt. 4. Cook slowly for 20 minutes. 5. Add garlic. 6. Add tomatoes. 7. Add paprika. 8. Simmer 20 minutes; mash fine; it should be thick. |
