I love to make this pasta salad in the summer when tomatoes are abundant. Ingredients:
8 ounces uncooked spiral shaped pasta |
2 1/2 cups diced fresh tomatoes |
1 tablespoon dried basil |
1/4 cup vegetable oil |
2 tablespoons cider vinegar |
2 garlic cloves, minced |
1/4 teaspoon salt |
1/8 teaspoon pepper |
6 tablespoons grated parmesan cheese |
Directions:
1. Cook pasta according to package directions. 2. Combine tomatoes and basil in a serving bowl and set aside. 3. In a bowl, combine the oil, vinegar, garlic, salt and pepper. 4. Drain pasta and add to tomato mixture. 5. Drizzle with oil mixture and toss to coat. 6. Sprinkle with Parmesan cheese. 7. Serve immediately. |
