I'm trying to feed my family of four on $10 or less for each night's dinner. I made it and was surprised at how much I liked it. I'm posting it here for others who are budget-minded. The original recipe submitter said that it serves 6 people at 69 cents per serving. I'm posting it with the same serving size she had, but truthfully my family of 4 likes to eat more than that, so I doubled the recipe and had a bit left over for lunch the next day. Ingredients:
1 (8 ounce) package spiral pasta |
1 (10 ounce) package frozen creamed spinach |
1 (14 1/2 ounce) can diced tomatoes, undrained |
3 tablespoons grated romano cheese, divided |
3 tablespoons grated parmesan cheese, divided |
1/2 teaspoon salt |
Directions:
1. Cook pasta according to package directions. Meanwhile, prepare spinach according to package directions. Drain pasta; place in a large bowl. Add the spinach, tomatoes, 2 tablespoons of Romano cheese, 2 tablespoons of Parmesan cheese and salt; toss to coat. Sprinkle with the remaining cheese. |
