Tomato Soup With Tortellini |

Refreshing soup, good for summer or even cold nights. Goes good with some crusty bread and a nice salad. Ingredients:
1 cup chopped onion |
1 tablespoon olive oil |
2 lbs. ripe tomatoes (6 medium), peeled, seeded and chopped |
1-1/2 cups chicken broth |
1-1/2 cps water |
1-8 oz can tomato sauce |
1 teaspoon dried sage, crushed |
1/4 teaspoon salt |
1/4 teaspoon pepper |
4 oz. cheese tortellini, cooked and drained |
parmesan cheese for garnish |
Directions:
1. In a Dutch oven, cook onion in hot oil until tender (not browned). 2. Stir in tomatoes, chicken broth, water, tomato sauce, sage, salt and pepper. 3. Bring to a boil, reduce heat. Cover and simmer about 30 to 35 minutes. 4. Remove from heat and cool slightly. 5. Place 1/2 of mixture at a time into a blender and blend until smooth. Repeat with remaining mixture. 6. Return to saucepan. Stir in cooked tortellini, heat through. 7. Garnish with parmesan cheese . |
