Hearty homemade soup Ingredients:
1lb-2lb tomatoes, (or one tin of chopped toms) |
1 carrot |
1 onion |
1 stick celery |
2 tbsp olive iol |
a good pinch of sugar |
1 tbsp tomato puree |
a jug of stock, (veg or chicken, either is fine) |
i like to add a tsp of cumin and galam masala (optional) |
salt n pepper |
Directions:
1. Peel and dice the veg 2. fry in a pan in the oil 3. when soft add tomato puree and fry for a few minutes (if using, add the spices at this stage) 4. add the stock and tomatoes add salt n pepper and sugar and simmer for 20 minutes 5. put in a blender and blend 6. put back in pan and warm 7. can be eaten like this for a rustic soup or can be put through a sieve 8. serve with crusty bread |
