A creamy tomato soup. Use canned tomatoes or fresh. For fresh tomatoes use approx 2-3 pounds. Ingredients:
2 teaspoons olive oil |
2 garlic cloves, minced |
1 small onion, chopped |
28 ounces canned tomatoes |
5 cups chicken broth |
1/2 cup uncooked oatmeal |
1/2 teaspoon salt |
1 teaspoon ground basil |
1/4 teaspoon black pepper |
1/4 cup skim milk |
Directions:
1. Saute garlic and onion in olive oil in a large pot. 2. Add remaining ingredients except milk. 3. Cook 20-30 min if using canned tomatoes. For fresh tomatoes cook 30-60 minutes. 4. Add milk. 5. Puree with hand blender. |
