I got this from my friend Jimmy. Its the only Tomato soup I like. And its so easy! I usually double it to make enough for several meals. Ingredients:
3 cups vegetable broth |
28 ounces whole tomatoes |
1 cup celery, chopped |
1 cup carrot, shredded |
2 tablespoons butter |
3/4 cup onion, chopped |
2 tablespoons flour |
salt and pepper |
Directions:
1. Boil broth. Add tomatoes, celery, and carrots. 2. Simmer (covered) for 30 minute. 3. In skillet, melt butter and saute onions. Stir in flour. 4. Add to broth and mix well. Bring to a boil for a few minutes. 5. Puree smooth. season to taste. |
