Tomato Simmering Sauce for Fish |

Works well for strong flavored fish like tuna, bluefish, and mackerel. From a fish cookbook ripped from the days when I didn't keep track of the source. Ingredients:
1 medium onion, chopped |
1/2 cup celery, chopped |
3 tablespoons butter |
2 cups fresh tomatoes, peeled, seeded, chopped |
1/4 cup salad oil |
1/4 cup distilled white vinegar |
2 tablespoons lemon juice |
1/3 cup brown sugar |
2 tablespoons prepared mustard |
1 tablespoon worcestershire sauce |
1 teaspoon salt |
1 teaspoon ground black pepper |
Directions:
1. Cook onion and celery in butter until onion is limp. 2. Add tomatoes and cook for about 5 minutes. 3. Add remaining ingredients and simmer for 10-15 minutes. 4. Cook fish in this sauce and serve with the sauce over the fish. |
