This is a highly flavored low calorie shrimp salad. You can substitute a good quality red wine vinegar for the sherry vinegar, but I urge you try the sherry vinegar if you have not done so. 100 calories per 3/4 cup serving Ingredients:
2 tablespoons chopped fresh parsley |
6 tablespoons sherry vinegar |
2 tablespoons extra virgin olive oil |
1/4 teaspoon salt |
fresh ground pepper |
2 garlic cloves minced |
3/4 pound medium size cooked shrimp, shelled and deveined |
2 cups diced tomato |
1/2 cup chopped mild sweet onion |
1/2 cup chopped green pepper |
1/2 cup chopped red pepper |
Directions:
1. Combine the first 6 ingredients in a medium bowl 2. Stir with a whisk until well blended 3. Add the shrimp and remaining ingredients and toss gently 4. Cover and chill 2-4 hours |
