TOMATO SHRIMP MARGARITAS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Crenshaw Estate in Grand Prairie, Texas in 1994. Ingredients:
2 pounds fully ripened fresh tomatoes |
1 jalapeno pepper seeded and finely chopped |
1 tablespoon grated lime zest |
3/4 teaspoon salt |
1/2 teaspoon ground black pepper |
2 tablespoons tequila |
2 tablespoons lime juice |
1 tablespoon orange flavored liqueur |
1-1/2 pounds cooked large shrimp peeled |
Directions:
1. Remove stem ends from tomatoes and finely chop. 2. Combine tomatoes, jalapeno, lime zest, salt, pepper, tequila, lime juice and liqueur until blended. 3. Chill then spoon an equal amount of tomato salsa into 6 margarita or wine glasses. 4. Surround with chilled shrimp dividing evenly then serve. |
