This hearty pasta dish is a lifesaver for a busy mom as it allows you to put a tasty meal on the table quickly that the whole family will eat. Serve it vwith a green salad and crusty bread. Each serving is 1 cup. Diabetic Exchanges: 2 starch, 1 lean meat, 1 vegetable. This recipe comes from Susan Pfeiffer. I found this recipe in Light & Tasty magazine. I have not tried this recipe, but I'm posting it for safe keeping. Ingredients:
8 ounces uncooked ziti pasta or 1 small penne pasta |
8 ounces turkey italian sausage |
1 small onion, chopped |
1 garlic clove, minced |
14 1/2 ounces diced tomatoes, undrained |
1/2 teaspoon dried oregano |
1/2 teaspoon dried basil |
1/4 teaspoon salt |
1/4 teaspoon pepper |
1/2 cup fat-free half-and-half |
1/4 cup shredded parmesan cheese |
Directions:
1. Cook pasta according to package directions. 2. Meanwhile, crumble sausage into a nonstickn skillet. 3. Add onion and garlic; cook over medium heat until sausage is no longer pink. 4. Drain. 5. Add the tomatoes and seasonings; bring to a boil. 6. Reduce heat; simmer, uncovered, for 10 minutes or until slightly thickened, stirring occasionally. 7. Stir in half and half; heat through (do not boil). 8. Drain pasta; add sauce and toss to coat. 9. Sprinkle with Parmesan cheese. |
