3 shallots, chopped |
2 garlic cloves, minced |
2 tablespoons olive oil |
8 plum tomatoes, seeded and diced |
1 to 2 tablespoons chopped fresh cilantro |

Directions:
1. Sauté shallots and garlic in hot oil in a large skillet until tender. Add tomato and next 3 ingredients. Bring to a boil; reduce heat, and simmer 5 minutes. |
