Ingredients:
5 pounds ripe tomatoes, peeled, cored, and chopped |
2 medium onions, finely chopped |
2 cloves garlic, minced |
1 bay leaf |
1 1/2 teaspoons salt |
3/4 teaspoon dried whole oregano |
1/2 teaspoon pepper |
1/8 teaspoon crushed red pepper |
1/2 teaspoon sugar |
Directions:
1. Combine all ingredients in a large saucepan. Bring to a boil. Reduce heat; simmer 2 hours, stirring occasionally. Press mixture through a food mill. Return mixture to saucepan. Cook over medium heat, stirring frequently, 25 minutes or until thickened. 2. Pour into hot sterilized jars, leaving 1/4-inch headspace. Cover with metal lids; screw bands tight. Process in boiling water bath 35 minutes. |
