Tomato Salad With Mozzarella and Olives |

From Cooking Up Something Special, the sisterhood of Temple Beth Ahm, 1986, submitted by Blanche Meisel. No cook recipe, just marinate several hours for best flavor. Ingredients:
1 lb tomato, diced |
1/4 cup red onion, sliced |
1/2 lb mozzarella cheese, diced |
1 (16 ounce) can black olives, pitted, drained |
1 tablespoon red wine vinegar |
3 tablespoons olive oil |
salt, to taste |
pepper, to taste |
1/4 teaspoon dried mustard |
fresh basil (optional) |
Directions:
1. Toss tomatoes, onions, cheese and olives together. 2. Mix the rest of the ingredients for the dressing with a whisk and pour it over the tomatoes; toss gently. 3. Marinate several hours for best flavor. |
