Tomato Salad With Mozzarella and Olives

Ingredients:
1 lb tomato, diced
1/4 cup red onion, sliced
1/2 lb mozzarella cheese, diced
1 (16 ounce) can black olives, pitted, drained
1 tablespoon red wine vinegar
3 tablespoons olive oil
salt, to taste
pepper, to taste
1/4 teaspoon dried mustard
fresh basil (optional)
Directions:
1. Toss tomatoes, onions, cheese and olives together.
2. Mix the rest of the ingredients for the dressing with a whisk and pour it over the tomatoes; toss gently.
3. Marinate several hours for best flavor.
