Tomato Salad With Feta Cheese

Ingredients:
2 large ripe tomatoes
1 medium green bell pepper (cored and seeded)
2 green onions (both white and green parts)
1/4 cup coarsely chopped fresh flat-leaf parsley
1/4 cup extra virgin olive oil
1 tablespoon balsamic vinegar
salt
freshly ground black pepper
3 ounces feta cheese (drained)
splash red wine vinegar
Directions:
1. Core the tomatoes and cut them into 1-inch cubes.
2. Cut the bell pepper and onion into 1/4-inch dice.
3. Combine the tomatoes, bell pepper, and onion in a serving bowl with the parsley, olive oil, and balsamic vinegar and toss gently but thoroughly to mix.
4. Taste for seasoning, adding salt and black pepper and a dash of red wine vinegar as necessary; the salad should be highly seasoned.
5. Crumble the feta cheese on top of the salad and serve at once.
