Tomato Salad With Feta Cheese |

A must-have accompaniment to any grilled dinner! :) From Steven Raichlen's, The Barbecue Bible. Ingredients:
2 large ripe tomatoes |
1 medium green bell pepper (cored and seeded) |
2 green onions (both white and green parts) |
1/4 cup coarsely chopped fresh flat-leaf parsley |
1/4 cup extra virgin olive oil |
1 tablespoon balsamic vinegar |
salt |
freshly ground black pepper |
3 ounces feta cheese (drained) |
splash red wine vinegar |
Directions:
1. Core the tomatoes and cut them into 1-inch cubes. 2. Cut the bell pepper and onion into 1/4-inch dice. 3. Combine the tomatoes, bell pepper, and onion in a serving bowl with the parsley, olive oil, and balsamic vinegar and toss gently but thoroughly to mix. 4. Taste for seasoning, adding salt and black pepper and a dash of red wine vinegar as necessary; the salad should be highly seasoned. 5. Crumble the feta cheese on top of the salad and serve at once. |
