I got this from my mom, she made this all the time while I was growing up. I have continued to make it for my family, and we all LOVE IT! I always make this in the morning and let sit all day in fridge. GREAT with Italian Bread! Ingredients:
4 tomatoes, diced (real ripe ones) |
1/2 onion, chopped up |
2 garlic cloves (minced) |
4 tablespoons olive oil or 4 tablespoons vegetable oil |
salt & pepper |
parsley or basil |
Directions:
1. Put all Ingredients together in a bowl with a lid. Put top on and shake. Let sit for at least an hour. (2-4 hours for it to really marinate together) Then serve with Italian Bread, or whatever you prefer. |
