My Italian grandmother used to call this dish tight rice . She never had a recipe for this so it took quite a few years and many failures to come up with this acceptable substitute! Ingredients:
1 tablespoon good olive oil |
1 cup arborio rice |
2 cups chicken stock |
1 1/4 cups tomato puree |
salt, if desired |
Directions:
1. Heat the oil in sauce pan. 2. Add arborio rice and stir to coat rice. 3. Combine the chicken stock and tomato puree in a pot. 4. Bring just to a boil. 5. Add stock mixture to rice in pan. 6. Simmer rice, stirring frequently until liquid is absorbed and rice is tender. 7. **You may choose to add a pinch of dried herbs (oregano, basil, etc.) to this dish while it simmers. |
