Tomato Rice

This rice dish is yummy with chicken or even by itself. It's full of flavor and very healthy!
Ingredients:
1/4 c olive oil
2 tbsp butter or bacon drippings
1 large yellow onion, peeled and chopped
2 cloves garlic peeled and chopped
2-3 large tomatoes, peeled, seeded, and chopped
3 cups beef or chicken broth
2 cups long grain rice
salt and pepper to taste
chopped cilantro (for garnish / optional)
Directions:
1. Heat the oil and butter in a large saucepan over moderate heat.
2. Add the onion and garlic and cook 5 minutes, until soft but not
3. brown.
4. Add the tomatoes, cover and simmer for 15 minutes.
5. Add the broth and bring to a boil.
6. Stir in the rice, salt, and pepper, and cover.
7. Reduce the heat to a simmer and cook covered until the rice is done, about 20 minutes.
8. Fluff with a fork and garnish with chopped cilantro if desired.
