Got this from an old Southern Living Cookbook. Used fresh tomatoes and cucumbers. This made a great summer evening salad. Very refreshing. Ingredients:
3 tomatoes, sliced |
1 medium cucumber, thinly sliced |
1 medium onion, thinly sliced and separated into rings |
1/2 cup sliced carrot |
1/2 cup sliced celery |
1/2 cup tarragon vinegar |
1/2 cup water |
1/4 cup sugar |
1 teaspoon salt |
1 teaspoon paprika |
1 dash pepper |
Directions:
1. Combine the first 5 ingredients, and toss gently. 2. Combine remaining ingredients; mix well, and pour over vegetables. Cover salad and chill 4 to 6 hours. |
