Tomato Relish - India Style |

Spicy tomato relish that has an Indian flavor. Great on chicken, lamb, burgers, or just by itself on bread. Ingredients:
1 t butter |
2 teas minced garlic |
2 teas ground coriander |
1 teas pure chile powder (i use a hot asian chile powder) |
1 teas garam masala |
1 teas salt |
15 oz can chopped (not petite) tomatoes drained |
1 t lemon juice |
1/4 c chopped fresh cilantro |
Directions:
1. Melt the butter in a pan over medium heat 2. Add garlic and the rest of the herbs and spices except cilantro 3. Saute for one minute, stirring, careful not to over brown the garlic 4. Add the drained tomatoes stirring well 5. Simmer for 3-4 minutes. 6. Remove from heat and place in a bowl 7. Stir in the lemon juice and cilantro. 8. Let cool and then cover. 9. Will keep for 4-5 days in the refrigerator 10. Use on burgers in place of catsup & mustard. Great on a grilled chicken pita along with a dollop of yogurt . Use as a side for chicken, lamb, beef, or pork. We love it just spread on a piece of bread! |
