Tomato Red Onion And Skinny Lemon Salad |

Fresh salad that is going to look beautiful on my Easter table. My prep times are a little extended - I slice things slowly...especially when it calls for thinly sliced! Ingredients:
4 medium tomatoes, but into thick slices |
1 large red onion, thinly sliced |
2 lemons, sliced paper thin, seeds removed |
3 tablespoons white wine vinegar |
1 teaspoon kosher salt |
freshly ground pepper |
1/2 tsp. sugar |
1/2 cup extra-virgin olive oil |
1 1/2 tbsp. finely chopped fresh tarragon |
Directions:
1. On a platter, arrange the tomatoes in rows alternating with slices of red onion and lemon. 2. In a small bowl, combine vinegar, salt, pepper, and sugar. Whisk in the olive oil in a steady stream. Stir in the tarragon. Pour over the salad and serve immediately. |
