Easy side dish that is great paired with a roasted meat. Mom made it along with her baked chicken and it was always delightful.
Ingredients:
2 6 oz cans of tomato paste
1 46 oz can of v-8 or tomato juice
1 scant teaspoon of salt
2 cups of brown sugar
14 slices of white bread, cubed
1 cup of melted butter
Directions:
1. Boil tomato paste, juice and salt for five minutes.
2. Add sugar and stir until dissolved.
3. Place cubed bread in a 13 x 9 baking dish.
4. Pour butter over the top.
5. Add tomato mixture and bake uncovered for one hour.
6. May be frozen and reheated.
