Ingredients:
220 g shrimp |
150 g spinach |
400 g tinned chopped tomatoes |
2 cloves of garlic |
1 tsp extra virgin olive oil |
Directions:
1. Heat Oil 2. Crush Garlic and add to medium sized pan 3. Add shrimp (I use precooked without shells) and stir on a medium heat for a few minutes. 4. Chuck in the tinned tomatoes and let it simmer for about 5 minutes (or more if you like it less watery) 5. Add the spinach - stirring all the time, let it cook for about a minute and then eat! 6. ps you can add loads of veg to this if you want - mushrooms, peppers, broccolli etc. |
