This doesn't sound like it goes together but it is a great dish. It's a Paula Deen recipe. Ingredients:
4 tomatoes, peeled & sliced |
10 fresh basil leaves, chopped |
1/2 cup chopped green onions |
1 - 9 in. prebaked deep dish pie shell |
1 cup grated mozzerella cheese |
1 cup grated cheddar cheese |
1 cup mayonnaise |
salt & pepper |
Directions:
1. Place tomatoes in a colander in the sink in 1 layer. Sprinkle with salt & allow to drain for 10 minutes. 2. Layer the tomatoe slices, basil & onion in pie shell. 3. Season with Salt & Pepper 4. Combine the grated cheeses & mayonnaise together, mix well. 5. Spread mixture on top of the tomatoes. 6. Bake at 350 degrees for 30 minutes or until lightly browned. 7. Cut in slices and serve warm. |
