Fast & Easy Tomato Pie. This is a pie version. Not a bread version as I grew up with. Ingredients:

2 frozen pie shells |
1 small onion - chopped |
7 tomatoes |
garlic salt pepper, oregano to taste |

8 oz. monterey jack cheese, grated |
8 oz. mozzarella cheese, grated |
fresh grated parmesan cheese |
1/2 cup of mayonnaise |
Directions:
1. makes 2 pies 2. Peel and Slice tomatoes. Lay between paper towels 2-3 hours to drain. 3. Sprinkle salt, pepper and oregano over tomatoes 4. Bake pie shells 5. Layer tomatoes, 6. Sprinkle onions 7. Layer monterey jack cheese 8. Layer tomatoes 9. Sprinkle onions 10. Layer mozzarella cheese 11. spread 1/4 cup of mayonnaise over each pie 12. Sprinkle fresh grated parmesan cheese 13. Bake 350 degrees for 45 minutes 14. You might want to put a cookie sheet under the pie pans, sometimes it bubbles over. |
