Tomato Pesto And Feta Tart |

This tart is flaky and savory and very popular with your company pretty on the plate great with wine. Ingredients:
1 pack ready-rolled puff pastry |
2 tbsp pesto |
61/2oz cherry tomatoes, halved |
11/4oz feta or goats cheese, crumbled |
1tbsp fresh basil, roughly chopped |
Directions:
1. Preheat the oven to 400F 2. Take one sheet of puff pastry and cut it into fours, 3. Place the pastry on a parchment lined baking sheet. 4. With small knife, make a slit in a frame pattern about a half inch in from the edge. Do not cut through all the way. 5. Place a dollop of pesto on each pastry tart and spread to cut lines. 6. Slice the cherry tomatoes in half and place on top of pesto crowd them on in a random pattern. 7. Place the pan in the oven for ten minutes remove and add the fete cheese. 8. Add some fresh ground black pepper. 9. Return to the oven for another eight minutes. 10. Remove from oven and serve warm. 11. Fantastic for a wine tasting party. 12. * Note Black Olives make a nice alternative |
