I have no idea where I found this recipe, but it looks like a good one. Even better if you have home-grown tomatoes and basil!
Ingredients:
3 cups tomatoes, seeded and coarsely chopped
1 (16 ounce) can chickpeas, drained and rinsed
3/4 cup onion, diced
1/4 cup fresh basil, chopped
2 1/2 tablespoons red wine vinegar
1 tablespoon dijon mustard
1/2 teaspoon salt
1/2 teaspoon black pepper
Directions:
1. Combine the dressing ingredients. Pour over tomatoes and onions and toss well.
2. Serve cold.
