                    This pretty quiche is best fresh from the oven when the cheese is wonderfully gooey Ingredients: 
                    
                        
                                                1 sheet refrigerated pie pastry  |  
                                                1c(4oz)shredded mozzarella cheese  |  
                                                1/2c sweet onion,sliced  |  
                                                2 small plum tomatoes,seeded and thinly sliced  |  
                                                3 med. fresh mushrooms,thinly sliced  |  
                                                1/4c shredded parmesan cheese  |  
                                                3 eggs  |  
                                                1/2c half and half  |  
                                                1/2tsp ground mustard  |  
                                                1/2tsp dried basil  |  
                                                1/2tsp dried oregano  |  
                                                1/2tsp dried thyme  |  
                                                
                     
                    Directions: 
                    
                        
                            
                                1. Cut pastry sheet in half. On lightly floured surface,roll out remaining half into 8  circle. Transfer to 7  pie plate;flute edges 2. Layer half the mozzarella cheese,onion and tomato in pastry. Top with mushrooms;layer with remaining mozzarella cheese,onion and tomato. Sprinkle with parmesan cheese. In a swmall bowl,combine the eggs,cream,mustard and herbs;pour over top. 3. Bake at 350 for 45-55 mins. or until knife inserted near the center comes out clean.
