Tomato Onion Quiche

This pretty quiche is best fresh from the oven when the cheese is wonderfully gooey
Ingredients:
1 sheet refrigerated pie pastry
1c(4oz)shredded mozzarella cheese
1/2c sweet onion,sliced
2 small plum tomatoes,seeded and thinly sliced
3 med. fresh mushrooms,thinly sliced
1/4c shredded parmesan cheese
3 eggs
1/2c half and half
1/2tsp ground mustard
1/2tsp dried basil
1/2tsp dried oregano
1/2tsp dried thyme
Directions:
1. Cut pastry sheet in half. On lightly floured surface,roll out remaining half into 8 circle. Transfer to 7 pie plate;flute edges
2. Layer half the mozzarella cheese,onion and tomato in pastry. Top with mushrooms;layer with remaining mozzarella cheese,onion and tomato. Sprinkle with parmesan cheese. In a swmall bowl,combine the eggs,cream,mustard and herbs;pour over top.
3. Bake at 350 for 45-55 mins. or until knife inserted near the center comes out clean. Let stand for 10 mins. before cutting.
