Everyone's favorite summer salad once the tomatoes come in! The basil is out there just waiting to pair up! Yay summer! Ingredients:
2 pints cherry tomatoes, or miniature yellow plum tomatoes |
1/2 small red onion, sliced thinly |
1 pound mozzarella cheese, or feta, cubed |
3 stalks fresh basil leaves, whole, if small, chopped, otherwise |
2 large yellow bell peppers, roasted, peeled and cubed |
1/2 cup olive oil |
1/4 cup red wine vinegar, or balsamic vinegar |
fresh ground black pepper |
salt, jane's crazy salt, to taste |
Directions:
1. Cut tomatoes in half and toss with rest of ingredients. Make dressing with olive oil, vinegar, salt & pepper and toss with veggies. 2. NOTE: For the prettiest presentation, use yellow tomatoes and red peppers or red cherry tomatoes and yellow peppers. 3. Dice finer and use as topping for bruschetta (grilled french bread slices) for a great appetizer. |
